Abstract£ºThis paper reviewed the fresh-keeping mechanism of electron beam irradiation in agri-foods preservation application recently, such as fruits, vegetables, edible fungi,meat and so on. Compared with 60Co irradiation technology, the electron beam irradiation technology has many advantages, for example: effective pasteurization, low cost, contamination-free and safety. This technology has the potential capacity in agri-foods processing and fresh-keeping.
