电子束辐照在农产品贮藏保鲜中的应用

摘 要:本文对电子束辐照保鲜机理、功效和特性进行了阐述,并对电子束辐照技术在水果、蔬菜、食用菌、肉类、谷物等农产品保鲜中应用情况进行了评述。鉴于电子束辐照具有杀菌作用强、方便快捷、安全环保等优势,因此该技术在农产品保鲜应用上具有广阔的前景。


The application of electron beam irradiation in agri-foods preservation

Abstract:This paper reviewed the fresh-keeping mechanism of electron beam irradiation in agri-foods preservation application recently, such as fruits, vegetables, edible fungi,meat and so on. Compared with 60Co irradiation technology, the electron beam irradiation technology has many advantages, for example: effective pasteurization, low cost, contamination-free and safety. This technology has the potential capacity in agri-foods processing and fresh-keeping.
